This recipe makes one giant peanut butter cookie, enough to share between four people if divided into four pieces, or if you want two pieces – two people. Or maybe you don’t want to share at all! This recipe could be easily divided into 4 smaller peanut butter cookies. Be sure to reduce the baking time to about 9-10 minutes if going that route.
This cookie is full of chocolate… paired with the peanut butter, it’s heaven. My favourite pairing.
2 tablespoons beaten egg (crack an egg, beat it, and use 2 tbsp)
1/2 tsp vanilla extract
2 tablespoons creamy peanut butter
1/2 cup (62g) plain flour
1/4 tsp baking soda
1/4 tsp salt
1/4 cup chocolate chunks (plus extra to press on top)
Melted chocolate to drizzle on top
Preheat the oven to 350F/176C, and line a baking tray with silicone mat or parchment paper. Set aside.
In a large bowl, mix the butter and sugars together until light and fluffy. Add egg and vanilla mixing until well combined.
Stir in peanut butter then add flour, baking soda and salt.
Fold in the chocolate chunks until combined.
With a large spoon, scoop into a ball onto prepared baking sheet. The dough will be sticky. Make sure the cookie dough ball is tall and round. Press the extra chocolate chunks on top.
Bake for 17-19 minutes, until edges are lightly browned. The centre may appear undone, but it will set as the cookie cools. Leave to cool on the baking tray for 10 minutes until transferring to a wire rack.
