This was my first time making blondies, and they were so good. These are soft, buttery, chewy, moist, lush, and dense. I added one of my favourite American peanut butter candy into the mixture (Reese’s Pieces) to add a little crunch.
Not only are these absolutely melt-in-your-mouth delicious, they’re quick and easy to make too! No mixer required.
1 cup Reese's Pieces (this includes some to press on top)
Preheat the oven to 350F/176C, and line an 8-inch baking pan with aluminum foil, leaving an overhang on the sides to lift the finished blondies out. Set aside.
In a large bowl, whisk the melted butter, brown sugar, and vanilla together until combined. Add the egg and mix well. Add the salt, and flour then stir together until combined. Fold in the Reese's Pieces.
Spread the batter evenly into the prepared baking pan. Press a few extra Reese's Pieces on top. Bake for 20 - 25 minutes or until lightly browned on top. Remove from the oven and allow to cool completely before cutting into squares.
Blondies stay fresh covered in an airtight container for up to 3 days at room temperature, or up to 1 week in the fridge. You can also freeze up to 3 months.
