If you’re a huge chocolate lover like me, you’ll fall in love with the two types of chocolate together in these bars. You won’t be able to stop at just one bar – trust me!

How to make Fudge Stuffed Chocolate Cookie Bars

Ingredients you’ll need:

  • Plain/all-purpose flour
  • Cocoa powder: I used Dr. Oetker Fine Dark Cocoa Powder.
  • Baking powder
  • Baking soda
  • Salt
  • Unsalted butter
  • Light brown sugar
  • Caster/granulated sugar
  • Large egg
  • Vanilla extract
  • White chocolate chips/chunks

For the fudge:

  • White chocolate
  • Sweetened condensed milk

To make these chocolate cookie bars, simply whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

In a separate bowl, whisk together the butter and sugars until combined. Add the egg, and vanilla, and mix until combined. Add the dry ingredients and mix until just combined. Fold in the white chocolate chips.

Press half of the cookie dough into an 8×8-inch square baking pan lined with foil or parchment paper.

For the fudge, place the white chocolate into a microwave-safe bowl, and heat in 20 second intervals until melted and smooth. Add the condensed milk, and mix until combined.

Spread the mixture into the prepared pan, and smooth out the top. Place the remaining cookie dough on top and sprinkle with extra chocolate chips.

Bake for 25 – 30 minutes, then allow to cool completely in the pan on a wire rack before cutting into bars.

Ingredients
For the Cookie
  • 1 and 3/4 cups plain/all-purpose flour 218g
  • 1/4 cup cocoa powder 25g
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter 115g, melted
  • 1/2 cup light brown sugar 100g
  • 1/4 cup caster/granulated sugar 50g
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 3/4 cup white chocolate chips 130g, plus extra for topping
For the Fudge
  • 6 oz white chocolate 175g, coarsely chopped
  • 1/2 can sweetened condensed milk 7oz/198g
Instructions
For the Cookie
  1. Preheat the oven to 180C/350F/Gas 4. Line an 8x8-inch square baking pan with foil or parchment paper. Set aside.
  2. Whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.

  3. Whisk together the butter and sugars until combined. Add the egg, and vanilla, and mix until combined. Add the dry ingredients, and mix until just combined. Fold in the chocolate chips.
  4. Press half of the dough into the prepared pan.
For the Fudge
  1. Place the white chocolate into a microwave-safe bowl, and heat in 20 second intervals until melted and smooth. Add the condensed milk, and mix until combined. The mixture will be quite thick.

  2. Spread the mixture into the prepared pan, and smooth out the top. Place the remaining cookie dough on top and sprinkle with extra chocolate chips.
  3. Bake for 25 - 30 minutes. Allow to cool completely in the pan on a wire rack before cutting into bars.

Notes
